Toasted Coconut (over Sauteed Apples) – Recipe

How I Came Up With A Delicious Dessert (admittedly, this is my process for every new dish!)

So the other day I was thinking to myself, "Self, I've been super strict with my eating for a while now…maybe I can come up with a quasi-treat. Something that tastes like dessert but doesn't have the negative health implications. Can I do it?" 

The answer: YES! I'm up for the challenge. 

I went into the kitchen and looked around. Surveyed possible ingredients. Something with beets? Hmmm, beets are really sweet but that's not quite what I had in mind. Something with pumpkin, yam or sweet potato? Perhaps butternut squash? Nah, not really. Carrot? Hmmm, possible – I have a fantastic carrot souffle recipe but it has eggs in it, and I cut eggs out.  And then I saw the shredded coconut flakes. Now, that I can turn into something great! I'm all about all coconut products, all the time.

And so the new dessert was born (minus the birthing pains), and here it is. I just have to say this is truly scrumdelicioucmy! (scrumptious delicous yummy)

Toasted Coconut (Over Sauteed Apples) Recipe (this could not be easier!)

  1. Sauteed unsweetened coconut flakes in coconut oil or ghee until browned.
  2. Add a few tablespoons of maple syrup (sorry, I don't measure).
  3. Add a dash of sea salt.
  4. Turn off burner and let sit to carmelize.
  5. Eat now -or-
  6. Sauteed thinly sliced apples in coconut oil or ghee.
  7. Add vanilla, cinnamon, nutmeg and a dash of maple syrup.
  8. Remove from heat. 
  9. Place on plate and top with toasted coconut concoction.
