I attended the amazing Longevity Conference this past weekend, and yesterday William Davis, author of Wheat Belly spoke to a packed house. He spoke on the scientific relationship between grains and inflammation/autoimmunity/leaky gut. He reminded me that most gluten-free products are, in their own way, just as bad as the real thing and should be avoided for optimal health, and making your own is really the only way to enjoy certain things. He got me thinking.

I find that the best way to create a new culinary delight is to take something you love and modify it so it's healthy and still tastes (at least somewhat) like the original.

So last night after the conference I was puttering around, thinking that it had been a while since I had anything even resembling a baked treat (I tend to opt for meat or fish and veggies for every meal, even breakfast, with one serving of fruit a day, keeping it simple). Cooking and baking, for me, has become an exercise in creative fun. It's hard to believe that I used to HATE it, and do everything possible to avoid making even the simplest dishes (seriously, back in the day I didn't even make pasta – water boiling was too laborious!).

I've found that typical "paleo" baking is pretty easy – the eggs hold it together. But I don't eat eggs (allergic) so that definitely makes it more challenging to bake without gluten (glue-like substance) or eggs, which would normally be the items that keep the mix from being too dry and sticking together.

I started throwing things into a bowl and this is what I came up with: a gluten-free, grain-free, dairy and egg-free bread without sugar. I was actually impressed with how good it is. I mean let's be honest; the average donut-eating American wouldn't love this, but for me, who hasn't had much in the way of treats (and certainly nothing mainstream) in ages, this is pretty darned good! Great taste, decent texture (a bit heavy but I'm sure there's a way to tweak it), nice color, delicious smell while baking.

I apologize that I don't have exact measurements – I cook intuitively, meaning that as I go I make it up and figure out how much is needed (usually based on the good ole taste test).

Mix the following in a bowl:

~1/2 C coconut flour

~3/4 C almond flour

~1/2 t baking soda

~1/2 t baking powder

~1/3 C water

1/2 C coconut oil, coconut butter or ghee (or any combination)

~1/4 C apple butter or applesauce

~2 T nut butter of your choice (pecan, walnut, cashew, almond – whatever floats your boat)

2 t vanilla (liquid and/or dry)

1 t cinnamon

1/2 t nutmeg

3 dates (optional for sweetness)

Mix well and bake for about 45 minutes at 350.

    If anyone tries this and comes up with exact measurements, please post. I’m all for not measuring when cooking, but in baking…that doesn’t work out very often. 🙂
