Cashew Pudding

Combine in a blender:

-1/2 to 1 C cashews

-Coconut water

-vanilla extract

-1 Tb coconut butter (not coconut oil)

-dash of sea salt

Blend well then refrigerate. Sprinkle cinnamon or nutmeg on top and enjoy.

Variations include using coconut milk or plain water (instead of coconut water) and/or adding a couple drops of stevia.

  1. Simple, yet yummy. For variation, try adding dark chocolate and coconut flakes. Coconut milk makes it a bit more creamy.
